According to the definition in Annex 1 of the Turkish Food Codex Regulation on Food Additives published in the Official Gazette dated 30.06.2013 and numbered 28693:
" Modified Starches: Substances obtained by subjecting edible starches to one or more chemical treatments, which may have been subjected to physical or enzymatic treatment and acid or alkali thinning or bleaching."
