According to the definition in Annex 1 of the Turkish Food Codex Regulation on Food Additives published in the Official Gazette dated 30.06.2013 and numbered 28693:
" Hardeners: Substances that make or preserve the texture of fruit and vegetables, or that interact with gelling agents to induce or strengthen gel formation."
