Glucono Delta Lactone (GDL) is a raw material naturally found in products such as honey, fruit juice, processed vegetables, and is obtained through microbial fermentation from a carbohydrate obtained from plants.
Glucono delta lactone, identified with the code E575, has 1/3 the sourness of citric acid and has a sharp taste.
GDL converts to gluconic acid with the addition of water. When this conversion process is quite slow, GDL is a slow acidity regulator and gradually lowers the pH. Therefore, it is used in cheese products such as feta cheese and mozzarella, in tofu production, in meat products such as sausages, sausages and canned meats, in ketchup, salad dressing, chip sauces and ready-made salads (potato salad, chicken salad, tuna salad, shrimp salad, etc.). It is used as an acidity regulator and pH adjuster in production. It is used as a preservative to extend the shelf life of seafood such as shrimp and mussels. It is used as a leavening agent in bakery products, together with sodium bicarbonate. It is used in the content of lubricants.
