Xanthan gum is a polysaccharide obtained from the fermentation of glucose or sucrose with the bacteria Xanthomonas campestris.
It is known by the code E415 and is used as a stabilizer and thickener additive in food production.
Its chemical formula is (C35H49O29)n. Its molecular weight is about 10000. The pH of its 1% solution is 7.3.
Xanthan gum, a microbiological heteropolysaccharide, basically consists of a main polymer skeleton with 1,4-linked βDglucose units as in cellulose. In the side chains attached to this skeleton, there is a trisaccharide consisting of a Dglucorinic acid residue between two D mannose residues.
The polymer also contains 4.7% Oacetyl groups and 3.03.5% pyruvic acid. These side chains, which are found in xanthan gum and make up approximately 60% of the molecule, impart many physical and chemical properties unique to xanthan gum. Due to its side chains, Xanthan gum can be fully hydrated even in the cold chain. It is also stated that these side chains make the xanthan gum resistant to hydrolysis.
One of the most remarkable features of xanthan gum is that it can increase the consistency at a high rate even at very low concentrations. It is used at a rate of 0.5%, even 0.05% in many food products. Thanks to its pseudo-elasticity feature, it maintains its stability despite creating a slippery sensation in the mouth.
Unlike other gum varieties, it is stable in large temperature and pH changes and has been accepted as a reliable additive in America, Canada and Europe. It is stable in solutions containing high concentrations of salt and is resistant to enzymatic degradation.
