Sorbitol, coded E420, is a natural carbohydrate found in many grained and non-grained fruits such as apples, prunes, cherries and grapes.
Its sweetening power is half that of sucrose and its calories are equivalent to those of table sugar.
Sorbitol, which remains stable during storage, has very good fluidity and compressibility during processing.
It is used in the confectionery industry due to its viscous and moisturizing properties.
Sorbitol, which is very easily soluble in water, has a sweetness between 1/3 and 1/2 of sucrose, depending on concentration and temperature, and is generally found as a 70% crystalline solution.
Sorbitol is naturally found in fruits, especially blackberries, and is prepared by high-pressure catalyst hydrogenation of glucose obtained from corn starch.
Usage areas:
Sorbitol, which finds applications such as sweetener and humectant in the food industry, serves as an excipient in the field of pharmacy and is also included in the formulations of toothpaste, chewing gum, cough lozenges and cosmetic products.
Sorbitol solution, which is also used in the production of polyethers, gives a feeling of freshness in the mouth because it has endothermic dissolution enthalpy. It has a laxative effect when consumed excessively.
Sorbitol, which is not affected by insulin and does not increase the blood sugar index, is widely used in the formulations of products produced for diabetics.
