Sorbic acid is a versatile food preservative additive effective against yeast, mold and bacteria.
It is named with the code E 200 in the list of food additives.
Sorbic acid was first obtained from the unripe fruit of the bird ash tree (Sorbus aucuparia) and got its name from this tree. In 1945, its antimycotic (effective against fungi) and antibacterial effects were determined and it was suggested to be used as an effective preservative in food products.
Sorbates (sodium sorbate, potassium sorbate, calcium sorbate) that prevent mold and yeast growth are salts of sorbic acid. Since sorbates have different solubility properties, their application areas are wide.
Sorbic acid is white in color and has a distinctive, non-pungent odour. It is a free-flowing, dust-free, unsaturated fatty acid in powder or granule form.
It is slightly soluble in water (30°C 0.25 g / 100 ml), but shows better solubility in oil and completely soluble in alcohol.
The most suitable pH range for sorbic acid is pH values below 6.5.
Sorbic acid has a wide range of applications in foods. It is mostly used in dairy products, bakery products such as cake, pizza, rye bread, meat products, fruit juices, carbonated drinks, lemonade, dried fruits, cucumber and sauerkraut, soups to prevent microbiological development and increase shelf life.
Its effect on mold and yeast formation is much more than its effect against bacteria.
It can be added with other materials during food production or sprayed onto the surface of the produced food.
It can be added dissolved or dry depending on the application. It is more suitable to be added after heat treatment in foods that are subjected to heat treatment for a long time during production.
Sorbic acid is also used in pharmaceuticals, personal care products, cosmetics and other industrial products.
When determining the amount of sorbic acid to be added to the products, the humidity of the environment, the ambient temperature and pH value, and the way of packaging should be taken into consideration.
When used in the right amounts, it does not cause a change in the taste and smell of food products.
