Sodium metabisulfite or sodium pyrosulfite, also known as the disodium salt, is an inorganic substance.
Its molecular formula is Na2S2O5. Its molecular weight is 190.1 g/mol. Its density ranges from 1.1 to 1.2 g/cm3.
It exists in solid state under normal conditions. It looks like a white or yellowish powder. Its melting temperature is about 150°C.
When mixed with strong acid and water, sulfur dioxide (SO2) is released, which emits an unpleasant, pungent, irritating odour. In contact with air, it is oxidized to sodium sulfate (Na2SO4). It has a bitter odor because it also releases SO2 when mixed with the humidity of the air.
Sodium metabisulfite is used as a disinfectant, antioxidant and preservative.
It is used as a food additive and is defined by the code E223.
In addition, sodium metabisulfite is also used as a cleaning agent.
