Sodium benzoate is a chemical salt. It is obtained as a result of neutralization of benzoic acid with sodium bicarbonate, sodium carbonate or sodium hydroxide.
Sodium benzoate does not have the feature of being found in nature in pure form, but the benzoic acid from which it is derived is found naturally in many animals and plants and its production is provided from them. It is available as white and solid.
Foods such as apples, cinnamon, prunes, garlic, and raw cloves are examples of foods containing benzoic acid.
Its chemical formula is C6H5CO2Na (C7H5NaO2) and its molecular weight is 144.11 g/mol, and its decomposition temperature is 300°C. It is easily soluble in water.
The benzoic acid, which forms the origin of sodium benzoate, is commercially obtained as a result of the reaction of oxygen and toluon in the liquid phase at around 200°C. Cobalt and manganese salts are used as catalysts. As an alternative to this production method, oxidation of benzene with concentrated sulfuric acid or CO2 in the presence of catalysts can be offered. 90% of the benzoic acid produced is used in the industry, and 10% is used in the production of sodium benzoate, which is used in the pharmaceutical, food and cosmetic industries.
The melting temperature of sodium benzoate is around 300°C. Sodium benzoate is 200 times more soluble in water than benzoic acid.
Potassium benzoate, another salt obtained from benzoic acid, is a preservative like sodium benzoate. The difference of potassium benzoate from sodium benzoate is that it has low solubility and needs to be used in twice the concentration to get the same antimicrobial effect.
