Soapwort (Gypsophila) is a multi-branched, perennial, tap-rooted, herbaceous plant with a height of 5060 cm, belonging to the carnation family, blooming white flowers in June and July. Soapwort is obtained by pounding the roots of soapwort, whose leaves are pale green and stemless.
Çöven is one of the products exported by Turkey. Of the approximately 50 soapwort species growing in our country, 5 have economic importance. It generally grows in Central and Eastern Anatolia.

It consists of soapwort extract, resin, sugar and saponin.
Saponins are high molecular weight glycosides that are found in high amounts in some plants, especially soapwort (Saponaria), and have the property of foaming in water. It protects the plant from microbes and fungi, and some species increase the nutritional value of the plant and facilitate digestion.
Usage areas
In the food industry, soapwort extract is primarily used in making tahini halva. Apart from tahini halva, soapwort is also used in the production of Turkish delight and in the foam halva made in the Thrace region, which has a white and foamy structure. Additionally, in some regions in Turkey, when making halloumi cheese, soapwort is added to the brine after cooking to prevent the cheese from spoiling.
The purposes of using soapwort in halva production can be listed as follows;
The substance called saponin in the soapwort whitens the sugar wax.
Saponin softens sugar and makes it like a sponge
It acts as an emulsifier by allowing sesame oil to mix with sugar.
In halva making, if we list them according to quantity; 52-65% tahini, 35-48% sugar and 0.5% soapwort are used.
In the production of foam halva, soapwort and sugar are added after being boiled in water and turned into wax. Soap water produces foam halva with a slightly hard consistency and semi-fluid properties. There are two things to consider when adding soapwort water; The first is that the amount should not exceed a certain level, and the second is that the lid of the container should be kept closed while adding soapwort. Otherwise, excessive foaming will occur due to air ingress. Approximately 60-65% glucose syrup, 30-35% water and 0.01% soapwort juice can be used in making foam halva.
Apart from food, soapwort is used in the gold bleaching process, as a soap and shampoo material, or in the softener and cleaning industry.
It can be used to create foam in coffee, cocktails or other drinks. Soap seed extract is added to beverages to obtain a creamier and more foamy structure.
