The protease enzyme acts on the proteins in the flour. It is used to eliminate the difficulty of kneading and processing strong flours.

Protease is used especially in biscuits, crackers and wafer products to increase crispness and crunchyness. It is produced from the bacteria Bacillus subtilis. Addition of appropriate protease enzyme to flour,

In the production of biscuits and crackers, flours containing low protein and not strong gluten structure are used. However, if the flour used does not have these characteristics, some active ingredients are used to obtain the desired properties.

Reducing agents such as sodium bisulfate are generally used to create the desired effect in the gluten structure.

However, sodium bisulfate gives gluten the desired structure (such as reducing the amount of vitamin B1) and adversely affects other components in flour. Sodium bisulfate is banned in many countries due to its adverse health effects.

Protease (bacterial and fungal), an enzyme that can destroy protein, is now used instead of sodium bisulfate in order to soften the gluten structure in flour. While the protease enzyme gives the desired structure to gluten, it does not adversely affect other components in the flour. In addition, the protease enzyme is also used in the process of making bread with flour with high gluten content.

Amount of usage:
 
It is suitable to be used in the range of approximately 50-100 ppm. However, finding the amount of use of such products by trial and error method gives healthier results. There is no harm in using it with other enzymes and emulsifiers.
