Potassium metabisulfite is the potassium salt of sulfuric acid and its chemical name is potassium disulfide. It is used as a food preservative additive and is numbered E 224. Its molecular formula is K2S2O5, its molecular weight is 222.32 g/mol, its melting point is 190°C, its density is 2.34 g/cm3.
Potassium metabisulfite, which is white in color and crystalline powder, has a high solubility in water.
It is used for antioxidant and disinfectant purposes. In acidic conditions, it forms sulfuric acid, which acts as a preservative. This substance is sulfite and can be used as a chemical substitute, very similar to sodium bisulfite. Potassium metabisulfite has a crystalline structure that forms potassium oxide and sulfur dioxide when dissolved.
K2S2O5(s) → K2O(s) + 2SO2(g)
It is commercially available in tablet or powder form. It should be stored in a dry, cool and not exposed to air. May reduce the vitamin content in products due to oxidation when in contact with air.
