Pectin is a polysaccharide that can also be defined as a long chain consisting of pectic acid and pectinic acid molecules.
It is known by the code E440. It is used as a stabilizer and thickener in food production.
Pectin consists of 3 main parts:
Homogalacturonan consists of repeats of Dgalacturonic acid monosaccharide subunits.
Ramnogalacturonan I contains sequential Lramnose and Dgalacturonic acid subunits containing α(15)Larabinan and β(14)Dgalactan side bonds.
Ramnogalacturonan II is a complex multibranched polysaccharide.
Pectin preparations with more than 50% of the carboxyl groups in their composition in the form of methyl esters are called high methoxyl pectin. Preparations with less than 50% of the carboxyl groups in their composition and in the form of methyl esters are considered as low methoxyl pectin.
Pectin is a natural substance found in almost all fruits, especially apples, quince and oranges.
The genus found in apple peel acts as a magnet for ions of heavy metals such as lead and arsenic in the blood and helps to expel them from the circulatory system. It is rare in soft fruits such as cherries and strawberries. In fruit, it serves to hold cells together. When fungal enzymes (pectinase) break down the pectin, the fruit becomes soft and mushy. It is obtained commercially from apple pulp and orange peel.
Pectin has the ability to form gels with sugar. For this reason, pectin is used as a filling agent in the food industry in combination with sugar.
The well-known use of pectin is in jam making. Many fruits contain pectin, but not enough to form a gel in jam making; Therefore, pectin is added to improve the quality of the jam.
Pectin is added to a special sugar (gelling sugar) used especially in jam making. When pectin and sugar are heated, a network is formed. This explains why the jam thickens during cooking.
