Determination of Milk Fat Content by Milk Butyrometer:
 
 
Principle: It is to read the fat amount in the milk as %, by breaking down the other components of the milk except fat, with acid and making the oil clear with the help of amylalcohol.
 
 
Chemical Solutions: Sulfuric acid, amyl alcohol.
 
 
Tools and Materials: Milk butyrometer, 25 ml milk pipette , 10 ml acid pipette , amyl alcohol pipette (1 ml) , water bath.
 
Procedure: 10 ml of sulfuric acid is put into the butyrometer. Take 11 ml of homogenized milk, slowly add two layers of sulfuric acid from the bottom of the butyrometer opening.
 
 
Add 1 ml of amyl alcohol. The mouth is closed with a rubber stopper. By holding the lower and upper ends of the butyrometer, it is turned upside down with half-rotation movements, without shaking, until the coagulated casein disappears. Care should be taken as heat is released during this time. After the final inversion, it is held with the stopper down so that the contents are collected in the wide part of the butyrometer.
 
 
The stopper is placed symmetrically to the outside of the centrifuge. It is centrifuged for 5 minutes.
 
 
If the centrifuge is not heated, the reading should be taken after the butyrometer is kept in a 65°C water bath for 5 minutes.
 
 
Butyrometer degrees are made in kg. 1 liter of milk is 1032 g. Accordingly, a liter of milk containing 36 g of fat per kg contains 1.032 x 36 = 37 g/L of fat.
