Malic acid is an important acid found in most fruits and some vegetables, but synthesized commercially by hydrating maleic acid and fumaric acids in the presence of a catalyst, and taking place in the metabolism of every living thing.
It was first isolated from apples by Carl Wilhelm Scheele in 1785. In 1787, Antoine Lavoisier named it "malic acid", which means apple in Latin.
Malic acid and its salts (sodium, potassium, calcium) are a general purpose acid regulator and have a smooth and tart flavor. While it creates a taste effect similar to citric acid in some foods, it creates a natural flavor effect by clarifying the flavor in other foods. Due to these properties, it is used extensively in many industries for various purposes.
