It is used in the confectionery industry due to its viscous and moisturizing properties.
Sorbitol, which dissolves very easily in water, has a sweetness between 1/3 and 1/2 of sucrose, depending on the concentration and temperature, and is generally in the form of a 70% crystalline solution.
Sorbitol is naturally found in fruits, especially blackberry type fruits, and is also prepared by high pressure catalyst hydrogenation of glucose obtained from corn starch.
