Technical information:
Potassium bicarbonate (KHCO3) (also known as potassium hydrogen carbonate or potassium acid carbonate) is a colorless, odorless, basic, salty substance.
Potassium bicarbonate is water-soluble and is often added to bottled water to improve its taste. However, it is not soluble in alcohol. It is usually found in crystal structure or powder structure. It is obtained by chemical reaction of potassium carbonate with water and carbon dioxide. Natural potassium bicarbonate is known as the calcinite mineral and is found in small amounts in nature.
There is no proven theory that potassium bicarbonate has a carcinogenic effect and it does not leave a toxic effect on the environment.
Potassium bicarbonate is used as a carbon dioxide source that enables rising in bakery products. It is used in fire extinguishing agents in powder form. It is used as a buffering agent in many medical drugs.
Potassium bicarbonate, which is also used as a pH regulator in foods, has a basic structure. It is also used in mineral drinks with its foaming reducing effect. It also has a preventive effect on the growth of some types of bacteria and fungi.
Some beverages allow tartaric acids to precipitate as potassium tartrate in their production, resulting in a decrease in acidity. After its formation is completed, it can also be used just before bottling. It also improves taste harmonization.
