Invertase enzyme is a food additive defined with the code E1103 and converts crystal sugar (sucrose or sucrose) into fructose and glucose liquid sugars.

During this reaction, 1 mole of fructose and glucose are obtained by using 1 mole of water.

Fructose and glucose liquid sugar dispersed in 50% 50% equality is also called invert sugar. Invert sugar has many applications in the food, beverage and pharmaceutical industries.

Invertase enzyme is used to obtain invert sugar, especially in the confectionery and dessert industries, in order to inversion of crystal sugar and extend the shelf life of finished products.

With invert sugar, liquid candies and chocolates are produced, the sugar crystallization problem in marzipan and other sugary products is easily prevented, and the shelf life is extended by reducing the water activity in the products, creating environments where microorganisms can live more difficult.
