Tito hemicellulase enzyme is produced from Aspergillus species by fermentation. The hemicellulase enzyme is involved in the degradation of hemicellulose. Hemicelluloses is a polysaccharide found in the cell wall and is classified as more complex than sugar but less complex than cellulose.
 
Polysaccharides, which are around 23% other than starch in flour, are called pentosans.

Pentosans; They are grouped under two groups, soluble or insoluble in water. Water-insoluble particles have negative effects on the dough and are called hemicelluloses.

These water-insoluble particles are converted into water-soluble polysaccharides of high molecular weight by the hemicellulase enzyme.
 
As a result, the addition of hemicellulase in bread production;
 
It provides easy processing of the dough,

It helps to increase the elasticity of gluten,

Increases gas holding capacity,

Increases bread volume

It makes the inside of the bread smoother,

Provides a thin crust structure,
