Also known as gum arabic, acacia gum, gum arabic or gum arabic, this substance (E414) is a natural polysaccharide produced from the trees of Acacia senegal and Acacia seyal found in tropical Africa. If the bark of the tree is cut, it produces gum to close the gaps and this process (gummosis) takes about 38 weeks.
Arabic gum is chemically a carbohydrate polymer and is partially broken down in the large intestine. The energy value of arabic gum is less than half of the energy value of starch and maltodextrin.
More specifically, arabic gum is a variable mixture of arabinogalactan oligosaccharides, polysaccharides and glycoproteins. Depending on the source, the glycan components contain a large proportion of Larabinose bound to Dgalactose (Acacia seyal ) or Dgalactose bound to L-arabinose ( Acacia senegal). The gum obtained from Acacia seyal contains more 4OmethylDglucuronic acid but less Lramnose and unmodified D-glucuronic acid compared to Acacia senegal.

Arabic gum, which contains very little protein in its structure, is one of the most important hydrocolloids with high water solubility and solutions can be prepared up to 50-55% concentrations. This superior feature of the Arabic gum is due to its highly branched and complex structure.
Arabic gum dissolves well in water (except pH below 3.0), is compatible with solids, and exhibits a low viscosity in Newtonian fluid foods at concentrations below 40%. Insoluble in oils and many organic solvents, arabic gum is soluble in aqueous ethanol solutions. Arabic gum also has very little solubility in mixtures of glycerol, ethylene glycol, acetate esters, and acetate alcohol.
Another feature of it is that it can give very low viscosity solutions at low concentrations. Due to its effective emulsifying feature, it finds an important area of use in oil-water emulsions.
Prepared emulsions are insensitive to pH and electrolytes, and the use of stabilizers is required.
Usage areas
The use of arabic gum is very useful when substances such as thickeners, emulsifiers, stabilizers and film formers, which are widely used to stabilize flavors and oils, remain expensive, as in beverage production.
Arabic gum is used in traditional chewing gums, lozenges and is also used as a foam stabilizer in candies like Turkish delight. In confectionery, it helps to prevent the crystallization of sugar. Aroma capsules are used as a thickener in a wide variety of areas such as ice cream, pudding, salad dressings, confectionery and beverage mixes.
