Natural potato starch is known for its wider granular structure compared to other starches, as well as its transparency and high viscosity dough forming feature.
Although the average granule size is 30 microns, granule diameters vary between 5 and 100 microns.
The ratio of amylose in potato starch varies between 20-21%, and the ratio of amylopectin varies between 79-80%. (average 1:4)
