History in the Food Industry
Powdered milk was first made by Russian Doctor Osip Krichevsky in 1802.
In developing countries, the product has been adopted very quickly due to the expensive transportation and storage conditions. Because by drying the milk, which is 87% water on average, the number of product transports increases, as the solid content, which is the most important, is reduced.
In addition, since it is waterless, there is no problem such as protection from microorganisms, and transportation becomes cheaper as there is no need for transportation by refrigerated trucks.
Since this drying extends the shelf life by 1 year, powdered milk is preferred over regular milk.
Methods of Obtaining Milk Powder
Milk powder is usually produced using spray dryers, preferably from skimmed or whole milk.
Pasteurized milk is thickened in evaporators until 50% solids remains. The thickened milk is pulverized in spray dryers.
Milk can also be dried preferably with tumble dryers. Milk powder can be obtained by pouring milk on heated drums and scraping the solids in the dried milk with a knife. But this process leaves undesirable effects on the taste (burnt taste) and color (darker color) of the milk powder.
Freeze-drying method can also be used to obtain milk powder. While this process preserves the nutritional value of the milk more than the tumble dryer, it is not preferred due to the expensiveness of the system used.
Usage in Food Industry:
Since milk powder is soluble in water, it is sold directly to the consumer. By adding 1 to 9 water to milk powder, a product with normal milk consistency can be obtained. In places where milk supply or milk storage is difficult, milk powder consumption is preferred.
Since milk powder gives the same aroma as milk but is cheaper than using milk, milk powder is often preferred in milk-using industries. In addition, milk powder is preferred because of the convenience of storage conditions and the absence of deterioration of the product.
In food aid to countries such as Africa, milk powder is preferred for food safety and economic reasons in order to deliver the nutritional value of milk to those people.
In cake and dough processes, for product quality, milk powder is added when liquid milk is not desired to thin the product too much.
Milk powder is effective in the production of baby foods.
Milk powder is used to prepare the contents of dried ready-made products such as instant soup.
Most of the foods prepared for animals also include powdered milk.
The content of coffee creamers is made using milk powder.
