I+G is a vegan ingredient that can be used as a flavor enhancer to replace monosodium glutamate (MSG) in MSG-free foods.
Disodium 5-Ribonucleotides, also known as I+G, is a flavor enhancer made from Disodium Inosinate (E631) and Disodium Guanylate (E627) in a 1:1 ratio.
It can be used in synergy with MSG (E621) or in place of MSG to provide umami flavor.
A blend of 98% monosodium glutamate and 2% E635 has four times the flavor-enhancing power of monosodium glutamate (MSG) alone.
