Tartaric acid

Potassium bitartrate is the salt of tartaric acid. Tartaric acid is the main acid of grapes and constitutes 40-80% of the total acidity of these fruits. In addition, tartaric acid constitutes 1.6-2.8% of the total acid in berry fruits.

Tartaric acid, also known as dihydrosibutandioic acid, is a biotechnological substance that is widely found in plants and has an increasing industrial importance.

Tartaric acid has four stereoisomers. These are d (dexro) tartaric acid found in grapes and other fruits, 1 (levo) tartaric acid obtained from the racemic mixture, and artificially obtained racemic mixture dl tartaric acid and meso tartaric acid.
