Gypsophila is a perennial, taprooted, herbaceous plant with many branches, 50-60 cm high, belonging to the carnation family, blooming white flowers in June-July. The leaves of the soapwort are pale green and stemless, and the roots are pounded to obtain soapwort.

Soapwort is one of the products exported by Turkey. Of the approximately 50 types of soapwort grown in our country, 5 have economic importance. It is generally grown in Central and Eastern Anatolia.

Soapwort Extract
Soapwort extract consists of resin, sugar and saponin.
 
Saponins are high molecular weight glycosides found in high amounts in some plants, especially in soapwort (Saponaria) and have the ability to foam in water. They protect the plant from microbes and fungi, and some types increase the nutritional value of the plant and facilitate its digestion.
 
Areas of Use
 
In the food industry, soapwort extract is primarily used in the production of tahini halva. Apart from tahini halva, soapwort is also used in the production of Turkish delight and in the Thrace region's foam halva, which has a white and foamy structure. In addition, in some regions in Turkey, soapwort is added to the brine after cooking in the production of halloumi cheese so that the cheese does not spoil.
 
The purposes of using soapwort in halva production can be listed as follows;
 
The substance called saponin found in the soapwort whitens the sugar wax.
 
Saponin softens sugar and makes it like a sponge
 
Acts as an emulsifier by allowing sesame oil to mix with sugar.
 
In the production of halva, if we sort it according to the amount; 52-65% tahini, 35-48% sugar, 0.5% soapwort is used.
 
In the production of foam halva, soapwort and sugar are added after boiling in water and turning into a paste. Soapwort water serves to produce foam halva with a slightly hard consistency and semi-fluid properties. There are two points to be careful about when adding soapwort water; first, the amount should not exceed a certain level, and second, the lid of the container should be kept closed while soapwort is added. Otherwise, excessive foaming occurs due to air intake. In the production of foam halva, approximately 60-65% glucose syrup, 30-35% water and 0.01% soapwort water can be used.
 
Apart from food, soapwort is used in the process of bleaching gold, as a soap, shampoo material, or in the softener and cleaning industry.
It can be used to create foam in coffee, cocktails or other drinks. Soapwort extract is added to drinks to provide a creamier and foamier structure.
