Citric acid is a colorless, crystalline organic weak acid from carboxylic acids.

Citric acid is found in many plants and fruits, especially citrus fruits.

Lemon contains a large amount of this acid (about 8% of its dry weight).

The chemical structure of citric acid is shown below, its molecular formula is C6H8O7, molecular weight; 192.123 g/mol.

Citric acid is crystalline at room temperature, its density is 1.665 g/cm, melting point is 153°C, when heated above 175°C, it decomposes by losing carbon dioxide and water molecules, its solubility in water is high:

133 g/100 ml (20°C).

Citric acid and its salts are non-toxic, easy to use, easily decomposed, and are widely used because of these properties.

Citric acid was obtained by the Swedish chemist Carl Wilhelm Scheele in 1784 by crystallization of lemon juice. The industrial production of citric acid was started by the Italian citrus industry in 1860 and has been used as a food additive for over 100 years.

Although citric acid is found in large quantities in fruits and citrus fruits, its isolation from these plants is expensive, so it is produced commercially from sugar with the help of bacteria and yeasts.

There is 1 molecule of water in citric acid monohydrate, while there is no water molecule, that is, moisture, in citric acid anhydrate.

Therefore, about 7% of citric acid monohydrate is moisture and its price is therefore cheaper than anhydrate, but its efficiency is also lower.

E330 is the food additive code for citric acid. Citric acid is the most common pH control agent in the food industry.

Citric acid stabilizes candies and confectionery to prevent sugar from crystallizing.

Products using citric acid; beverages, fermented food products, cheese, biscuits, Turkish delight, cakes, frozen fish, ice cream, jams, jelly, frozen potatoes, sherbets, instant soups, tomato paste and canned food.

Citric acid forms bonds with metals and minerals very easily, and thanks to this feature, it facilitates the intake of some citric acid-containing minerals into the body, because these substances are easier to digest.

According to the World Intellectual Property Organization (WIPO), the amount of citric acid in the product should be between 0.005 – 0.01% by mass of the product, and the particle size should be 6 μrn.

Citric acid is used as an additive in bathroom and kitchen cleaners. The citric acid solution prepared at a concentration of 6% removes the lime from the glass. It is also used in industry to remove rust from steel.

The annual output of citric acid in 2007 was around 1,700,000 tons, with more than 50% produced in China. More than 50% of this amount is used in beverages for acidification, 20% is used in the food industry, the other 20% in detergents and the remaining 10% in the cosmetics and chemical industry.
