Technical information:
Celeriac (Gypsophila) is a perennial, pile-rooted herbaceous plant belonging to the clove family, blooming white flowers in June-July, 5060 cm high, multi-branched. It is obtained by pounding the roots of gypsum, whose leaves are pale green and sessile.

Çöven is one of the products that Turkey exports. Of the 50 species of gypsophila grown in our country, 5 of them are of economic importance. It is generally grown in Central and Eastern Anatolia.

It consists of cayenne extract, resin, sugar and saponin.

Saponins are high molecular weight glycosides found in some plants, especially soapwort (Saponaria) and have foaming properties in water. It protects the plant from microbes and fungi, and some species increase the nutritional value of the plant and facilitate its digestion.

Usage areas

In the food industry, çöven extract is primarily used for making tahini halvah. Apart from tahini halva, guen is also used in the manufacture of Turkish delight and in foam halva, which has a white and foamy structure, made in the Thrace region. In addition, in some regions of Turkey, çöven is added to the brine after cooking to prevent the cheese from spoiling in the making of halloumi cheese.

The purposes of use of Çöven in the production of halva can be listed as follows;

The substance called saponin in the soap whitens the sugar wax.

Saponin softens sugar and acts like a sponge

It acts as an emulsifier by mixing sesame oil with sugar.

In the production of halva, if we order them according to the quantity; 52-65% tahini, 35-48% sugar, 0.5% celandine are used.

In the production of foam halva, soapwort and sugar are boiled in water and added after waxing. Solvent water is used to produce foam halva with a slightly hard consistency and semi-fluid properties. There are two points to be considered while adding lye water; firstly, its amount should not exceed a certain level, and secondly, the lid of the container should be kept closed while adding the soapwort. Otherwise, excessive foaming will occur with air intake. In the production of foam halva, approximately 60-65% glucose syrup, 30-35% water and 0.01% soapwort water can be used.

Apart from food, mothballs are used in the gold bleaching process, as a soap and shampoo material, or in the softener and cleaning industry.
