Carrageenan is a polysaccharide derived from seaweed.

Carragheen, an Irish village, got its name from this village because of the abundance of this seaweed along its beaches. Today, it is produced in Canada, the Philippines, Chile, the USA, Indonesia, France and Portugal.

The gelatinous liquid obtained from this seaweed has been used in foods for centuries.

Carrageenans are molecules with high flexibility that can form helical structures.

Thanks to these properties, they can form different gels at room temperature. For this reason, they are used as stabilizers in the food industry and other industries.

One of the most important advantages of carrageenans is that they are thixotropic. (It thins with the surface pressure, but when this pressure is removed, they regain their old viscosity.) Thanks to these features, they are easily pumped and harden again immediately after.

There are three types of commercial carrageenan:
Tito Fully Refined Carrageenan is a kappa type carrageenan.

Kappa Carrageenan: Forms hard and solid gels. It is produced from Kappaphycus cottonii.

Iota Carrageenan: Forms soft gels. Produced from Eucheuma spinosum.

Lambda Carrageenan: When combined with proteins instead of water, it forms gels. It is used to thicken dairy products. Made from Gigartina.

All these types of carrageenan are soluble in hot water, but only Lambda carrageenan is soluble in cold water.

Carrageenan has been accepted as a food additive by the EU and is defined by the codes E407 and E407a.

Application Areas of Karagenan in the Food Industry:

Desserts, sauces, frozen products, beverages It is used to increase viscosity.

Dairy Products: The most used area of carrageenan in the world is dairy products. Carrageenan interacts with milk proteins and increases consistency.

In chocolate milk, it prevents the precipitation of cocoa particles. It is used to increase viscosity in products such as cream cheese, whipped cream, cream, puddings, yogurt, milk shakes and ayran.

Puddings: Used as gelling agent in milk puddings and also suggest coagulation. It can be used with other gums, starches and phosphate salts. It is used between 0.1 and 0.2%.

Processed Meat Products: By using it as a fat substitute, the water holding capacity and volume of the finished product is increased. It ensures that processed meat products such as salami are softer and better sliced.

Jams and marmalades: 1% is used.

Freezing: Increases the viscosity of the unfrozen part, keeps the crystal size limited, prevents crystallization and ensures the permanence of the color. It is used between 0.1 and 0.3%.

Jellies: It is used to create transparent and flexible water-based jellies. It can be used instead of gelatin. It can be used by mixing with carob gum.

Application Areas of Karagenan in the Cosmetics Industry:

Toothpaste Binds and stabilizes the ingredients of toothpaste.

It is used as a thickener in shampoos and cosmetic creams.

Application Areas of Karagenan in the Pharmaceutical Industry:
