Agar agar (or agar) is an extract from some red seaweeds (Gelidiacae, Sphaerococcaceae and Rhodophyceae) and contains agarose (70%) and agaropectin polysaccharides.
Agarose is responsible for the high gelling property of agar, while agaropectin gives it a viscous property. The agarose/agaropectin ratio in agar varies according to the raw material. The agarose content in the agar can be up to 75% at most.
